Primo Oval Large All-In-One: a family charcoal grill that arrives assembled

The Primo Oval Large All-In-One is a ceramic charcoal grill for families who grill most weeks. A kamado is a charcoal grill with thick ceramic walls that hold heat and moisture, so one grill can sear, roast, bake, and smoke. Its 300 square inches of cooking space hold about twelve burgers. The grill weighs 152 pounds. Primo is the only ceramic grill made in the USA, built by Empire Comfort Systems in Poplar Bluff, Missouri.

The oval shape lets you sear over coals on one side and roast on the other. All-In-One means the grill arrives assembled on a rolling cradle with side tables, a grate lifter, and an ash tool. Also included are heat deflector plates and racks for baking or smoking, plus a cast iron firebox divider to keep coals on one side. What comes in the Large All-In-One package?

The All-In-One ships as a fully assembled grill on a cradle with locking casters, plus fold-down side tables, a grate lifter, an ash tool, and, because this is an oval model, heat deflector plates, deflector plate racks and a cast iron firebox divider. The Includes tab notes that changing the package configuration changes what ships; the cart or table options bring only the cart or table and the grill.

How much can I cook on it?

The Large has 300 square inches of cooking grid, listed at 15 by 22 inches on the spec sheet, and the optional extension rack system adds another 195 square inches. Primo rates it for six whole chickens, one whole turkey, eight steaks, twelve burgers, eight racks of ribs or eight ears of corn in a single cook.

Can I grill and roast at the same time?

Yes. The patented oval shape gives true two-zone cooking: bank the lump charcoal to one side, or drop in the included firebox divider, and you get a direct searing zone next to an indirect zone for seafood, vegetables or a roast. With the deflector plates and racks in place the whole grill works as an oven or smoker.

How do I light it and hold a temperature?

Build a mound of natural lump charcoal, light it with a fire starter cube, chimney or electric starter, and leave the dome open for five to ten minutes. Then close the dome and open the draft door and top vent fully. As you get within about 25 F of your target, close the top vent to one-third and trim it in small steps. Never use lighter fluid; the ceramic absorbs it.

Which stand options are on this page?
