The Primo Oval X-Large Kamado is a ceramic charcoal grill for an island or a stand you already own. A kamado is a charcoal grill with thick ceramic walls that hold heat and moisture, so one grill can sear, roast, bake, and smoke. It has 400 square inches of cooking space for about twenty burgers and weighs 250 pounds. Primo is the only ceramic grill made in the USA, built by Empire Comfort Systems in Poplar Bluff, Missouri.

The oval shape gives you room to sear over the coals on one side and roast on the other. Kamado on this page means the ceramic grill head alone, with no stand, side tables, or tools. What is included with the X-Large grill head?

The ceramic body only: dome with the 5-position cast aluminum damper top, reversible cooking grates, firebox, fire grate and stainless draft door. Stands, side shelves, tools, heat deflectors, drip pans and the firebox divider are all separate on this listing and are selected on the page rather than bought elsewhere.

Which extras should I add for smoking?

For indirect cooking the guide requires deflector plates on deflector racks, so add the Heat Deflector Plates For XL and the Heat Deflector Rack from the Optional (Recommended) selector. The half drip pan catches fat or holds water for moisture, and the cast iron firebox divider lets you run a half fire for two-zone cooks and saves charcoal.

What stands fit this grill?

The Change Pkg Configuration selector lists the All-In-One cradle with side tables, the Cypress grill table sized for the X-Large, the Cypress countertop table and a steel cart with a stainless side table. The unfinished cypress tables come with locking casters and ceramic shoes for airflow under the grill; the metal cart adds a lower basket.

How much cooking area does it have?

The main grid is 400 square inches, 18.5 by 25 inches, and the optional extension racks add 280 square inches for 680 total. The brochure notes one rack adds over 30 percent more area and two racks over 60 percent. Primo rates it for eight chickens, two turkeys, twelve steaks, twenty burgers, ten racks of ribs or twelve ears of corn.

How much charcoal does it take?

Fill the firebox with natural lump charcoal for searing or long smokes, or half a firebox for two-zone cooking, per the Quick Start Guide. Unused charcoal can be relit two or three times: stir it with an ash tool so ash drops through the fire grate, then add about 30 percent fresh lump and rebuild the mound. Never use lighter fluid.
