Fire Magic Echelon Black Glass Pizza Oven: a gas oven for pizza, bread, and roasts

The Fire Magic Echelon Black Glass Pizza Oven is a built in gas pizza oven for the outdoor kitchen. Built in means it slides into a cutout in an outdoor kitchen island, so it has no legs of its own. It uses the same cutout as the 30 inch Echelon grill, so it drops into a standard island slot. It suits pizza night, but also bread, roasts, and cookies. Fire Magic builds it in the USA from 304 stainless steel, the grade that holds up best outdoors. Burners rated at 36,000 BTUs heat it from 200 up to 700 degrees, and a digital touch screen under the black glass holds the heat you set, reads the included meat probe, and connects to your phone through the app.

The pizzas bake on an 18 by 18 inch cordierite stone, a ceramic that takes high heat without cracking, and a baking rack and a wooden peel come in the box. Give the stone a full 25 minutes to heat, and the crust comes out crisp. The door has a glass window and a light inside, so you can watch the pizza without opening it. It needs an outlet in the island, or the battery pack that is optional on the page. On the page you pick natural gas or propane, and it comes built for that gas. A pizza accessory kit is optional on the page. Prefer a dial thermostat and a brushed steel face? See the Fire Magic Aurora Built In Pizza Oven. The Fire Magic Echelon Black Glass Pizza Oven ships free from My Cozy Outdoors with No Sales Tax (except WY) and the full manufacturer warranty.

FAQ

How hot does the Echelon pizza oven get, and how long does it take?

The digital thermostat runs from 200 to 700 degrees F over 36,000 BTUs of burners. The manual says to allow at least 25 minutes of preheating: the oven may hit the set point and switch the burners off sooner, but the cordierite stone needs the full 25 minutes to reach temperature for a crisp crust.

What do the digital controls do?

The black glass panel carries the same touch controls as the Echelon grills: a digital thermostat that holds the set temperature, a meat probe input for roasts, and timed cooking, with integrated smart technology for monitoring from a smartphone. The manual names the RHP Connect app and notes the thermometer power switch must stay on while the oven runs.

Does it need electricity?

Yes. The Specifications tab lists a 110 to 120 volt supply, and the manual calls for a weatherproof GFCI outlet for the IPI ignition, thermostat and interior light. If your island has no power, the Battery Pack option on this page’s Optional Accessories selector powers the ignition instead; the manual lists it as part 5660-01.

What cutout does it need?

The opening is 31 1/4 inches wide, 23 1/2 inches deep and 11 1/2 inches high, the same cutout as the E660i grill, so it drops into a 30-inch Echelon island slot. The countertop must be non-combustible; a combustible enclosure needs the insulating liner listed in the Fire Magic spec guide, and the manual asks for 18 inches of clearance.

What is included, and what is the accessory kit?

The oven comes with the 18 by 18 by 3/4 inch cordierite stone, an 18 1/4 inch baking rack, an interior light, and per the manual a wooden pizza peel and a meat probe with bamboo storage box. The Pizza Accessory Kit and Battery Pack are add-ons on the Optional Accessories selector, and you can choose both. See other pizza ovens here.

Natural gas or propane?

Both. Choose on the Gas Type selector: model 5660 is natural gas and 5660P is propane. A cart-mounted version is possible with the 660-SC24 portable cart base, which is a separate listing rather than an on-page selector. Propane cylinders inside an island follow the manual’s ventilation rules.

How do I prepare the stone the first time?

The manual says the cordierite stone needs no oil seasoning. Wipe it down, install it flat in its support frame in the cold oven, then bake it empty at 500 degrees F for one hour and let it cool two to three hours. Dust the peel with cornmeal or semolina for easy sliding, never cut pizza on the stone, and remember it stays hot for hours after use.
