Fire Magic Echelon Black Glass Built In Griddle: a flat top with two cooking zones
The Fire Magic Echelon Black Glass Built In Griddle is a 30 inch built in gas griddle. Built in means it slides into a cutout in an outdoor kitchen island, so it has no legs of its own. It uses the same cutout as the 30 inch Echelon grill, so the two line up in one island. It is for smash burgers, breakfast, fried rice, and fajitas that need a flat top instead of grates. Fire Magic builds it in the USA from 304 stainless steel, the grade that holds up best outdoors. Two stainless steel burners give 45,000 BTUs, each with its own knob, so one end of the plate can run hot while the other stays warm. The plate is a thick slab of stainless steel, 30 by 18 inches, that soaks up heat and gives it back evenly.
Push a knob in and a small glow plug lights the burner, so plan for an outlet in the island. A trough along the front catches the grease, and a stainless steel cover comes in the box. On the page you pick natural gas or propane, and it comes built for that gas. A rolling cart base that turns it into a freestanding griddle is optional on the page. Want the matching grill? FAQ
How big is the griddle surface?
The Key Features list a 30 by 18 inch cooking area on a 3/8 inch thick stainless steel plate, which Fire Magic rates for years of warp-free service. Two heavy-duty stainless burners supply 45,000 BTUs beneath it, and a removable stainless steel cover protects the plate between cooks.
Can I cook at two temperatures at once?
Yes. Two back-lit control knobs each run their own burner, giving a hotter zone for searing and a cooler zone for holding or eggs. The manual suggests verifying plate temperatures with a surface thermometer, and a two-piece drip collector trough funnels grease through two ports into the drip pan.
Does the griddle need power?
Yes. The Key Features list hot surface ignition and the Specifications tab a 110 to 120 volt supply; the manual specifies a weatherproof GFCI receptacle. The manual also notes the griddle’s power supply can run one side cooker in addition to the griddle, but a second side cooker needs its own supply.
What cutout does it use?
The same opening as the E660i grill: 31 1/4 inches wide, 23 1/2 inches deep and 11 1/2 inches high, with a 33 inch control panel width per the manual. A non-combustible countertop is required, and a combustible enclosure needs the insulating liner shared with the 30-inch grills and pizza ovens.
Can I make it portable?
Yes. Use the Optional Portable Cart Gas Grill Base selector on this page to add the 30-inch cart base, part 660-SC24, which the description names for this griddle. The cart has soft-close drawers, a storage door, fold-down shelves and a tank ring holder. Other built-in griddles are listed here.
How do I season and care for the plate?
Per the manual, wipe the surface clean, coat it with a high smoke point cooking oil or non-stick spray, then preheat on high for 15 minutes; add oil as you cook to keep it stick-resistant. After cooking, scrape debris into the drip trough with the included scraper, wipe down, and lightly oil the plate to preserve it until the next cook.
Natural gas or propane?
Both. Pick on the Gas Type selector before adding to cart; the Specifications tab lists E660i-1T4N for natural gas and E660I-1T4P for propane. Order the correct fuel so no orifice change is needed, and if a propane cylinder will sit in the island, follow the manual’s floor-level ventilation and cylinder-securing rules for propane.
